Easy Low Carb Ice Cream

For those on it, the Low Carb lifestyle (LCHF) is a very rewarding one. After the initial adjustment phase, you start to settle in and think less about the loss of sugary goodness in your life. But if you’re like me, and every now and then you crave a little after dinner or weekend treat then having a few go-to recipes is a surefire way of preventing cheating. Because LCHF is a lifestyle and cheating can really set you back on your weight loss goals.

I don’t have any fancy mixers or ingredients so this recipe is super simple (And so delicious!)


So delicious!

  1.  1 x tin of coconut milk
  2. 1 x teaspoon vanilla essence
  3. 100ml cream
  4. 100ml full cream milk
  5. 2 tablespoon xylitol
  6. 1 x shot of espresso (or a cup of filter coffee.. just watch out not too much water. Make it a short, strong cup!)
  7. Almonds or other lowcarb treats to add in / experiment with.


Mix/ blend (I use a stick blender) all ingredients for 2 min on high except for the nuts / other goodies. Add nuts at the end (They settle at the bottom but you can stir as its freezing) and put in a small, short container in the freezer. Stir every hour or so. Dig in!

P.S. You can play around with flavours (e.g. leave out coffee, keep it vanilla and add blueberries..) and also VERY delicious is leaving it in the freezer for an hour or so and drinking a glass as an iced-coffee. My hubby is crazy about LCHF treats and he keeps asking for some 🙂
